home made kimbap

Gimbap or Kimbap is a popular korean dish, made from steamed white rice (bap) and various other ingredients, rolled in gim (sheets of dried seaweed) and cut into bite size pieces. I've  tried many different recipes for the stuffing but this one had to be the most decent one. enjoy my version of kimbap. :)
disclaimer: not authentic but might just be your favourite one!!

Firstly you need short grain sushi rice :p no compromise on the quality!!

2 eggs for an omelette, some tuna in mayonnaise and some spinach.  We need to blanch the spinach whole in some boiling water for 30 seconds and keep it under cold running water. After that, add some chopped garlic and mix gently. cover and keep it aside.

Cook the rice like you normally do but wash and rinse 3 times before cooking. (I recommend you soak it for 30 minutes in cold water if you have the sushi rice.) After its done add 3 tbsp sesame oil ,2 tbsp fish sauce, some sesame seeds, some flax seed(good for digestion since we are eating white rice), and grated carrots (just because one has got to eat colourful and healthy too) to the rice and mix well with a spatula. Cover and leave it aside.

Lay out your bamboo rolling mat and keep your gim/seaweed shiny side down. Spread your rice as shown on the right. It is easy and fun doing this. Make sure you have a bowl of clean cold water and a wet kitchen towel beside you. The rice tends to stick to your fingers while doing this step.

This is how i lay out my kimbap...be as creative as you want with your ingredients. Omelette strips, tuna and spinach. People like adding crab sticks but they are not available where i live.

Go ahead and roll them up...there are a lot of rolling tutorials on YouTube.
You will need a clean, sharp knife to cut these up into bite size pieces. Wiping your knife with a wet kitchen towel each time will help cut better. Drizzle the pieces with some sesame seeds.Serve your kimbap with some soy sauce sesame seeds and sesame oil mixture and KIMCHI (my favourite!) My next post will show you how to make kimchi at home.

just me trying to be artistic :p

Remember to cook from your heart.
